MPM: Week of 3/8/2010

Last week’s menu proved to be pretty tasty.  Favorites were definitely the layered meatball bake and the Beerocks.  Also, I modified the Terrific Franks to use the spoon bread recipe and almost everybody liked them better.  (except for me, I didn’t care for the soft texture too much.)

Here’s this week:

Monday:  Impossibly Easy Taco Pie.

Tuesday:  Roast moose and baked potatoes.

Wednesday:  Dinner @ church.

Thursday:  Halibut Olympia and rice (except I’ll be using some ling cod that was shared with us.)

Friday:   Kids’ night:  Breakfast for dinner:  Cheryl’s Eggs (recipe below), cranberry walnut breakfast cookies (except without the walnuts as I am the only one who likes them) (and, honestly? I’ll substitute plain sugar for the fructose and canola oil for the pumpkin seed oil.  Gotta use what I have!), fruit.

Saturday:  Buffalo Chicken Chili.

Sunday: Chicken, noodles, and mashies (if I can remember to get the recipe from Aunt Mel.)

Cheryl’s Eggs (from a former co-worker of mine)

1 dozen eggs
1 cup sour cream
1 can diced chiles
2 cups shredded cheese (cheddar, pepper jack, or your favorite)

Mix all above; pour into greased 9×13 pan.  Bake at 350 for about 35 to 45 minutes or until cooked through.
