And, ya know, I’m kinda glad to see it go. Goodbye 2009, hello 2010.
(Actually, that’s not true. Honestly, I’m somewhat scared about what the new year will bring, since the last several have brought so much heartache and pain.)
Last week I scored BIG time with the Chicken Turkey pot pie by doubling the recipe, which made two pies. I then added 1/4 cup of Frank’s Red Hot to doctor up one of the pies Buffalo style. It was a tad too spicy for me, but The Bull’s eyes lit up something wonderful when he figured out the difference between our pot pie and the children’s.
There were also many rave reviews from my interpretation of Alton Brown’s roast turkey recipe. The Bull was gracious enough to “take care” of Wishbone while I was gone one day, so he spared me that whole scene. THANK YOU KINDLY, DARLING!! And the recipe came together fairly easily. Win-Win!
Here’s this week.
Monday: Mel’s Potato Soup using our leftover mashed potatoes.
Tuesday: Considering the amount of leftover mashed potatoes and the two pot pies that are in the fridge right now. . . . it will be leftover night.
Wednesday: Dinner @ church.
Thursday: New Year’s Eve party with friends. In case of inclement weather or ill children, we will have our own party foods at home: cheese slices and crackers, sliced apples, chips and dips, pesto, cookies, popcorn, basically whatever we have in the pantry and fridge that is a snack type of treat for the kids.
Friday: Kids’ night: Breakfast for dinner: pancakes, fruit, eggs.
Saturday: Chili and spoon bread.
Sunday: Lasagna for a crew: I’m thinking ahead to next week, when life gets busy again (not like it’s been calm lately . . . ) Make two, freeze one.
